3 salad recipes to enjoy in the summer

For this Greek salad we will need
- 1 cucumber

To prepare this salad, you only have to carefully cut each ingredient (tomato, bell pepper, cucumber, and onion).

Tortellini and cheese salad
For this preparation, we used the following:
- 17 oz of cheese tortellini
- ½ cup pesto
- Olive oil
- Capers
- 15oz of asparagus previously cooked (preferably al dente)
- ¼ cup chopped tomatoes
- Balsamic vinegar
- Salt and pepper
- Basil leaves (optional)
- ¼ of Parmesan cheese
- ¼ of pistachios
- ½ slivered almonds
Cook the tortellini in salted water, cook until they begin to float and are all dente, try not to cook them until they become watery.
Remove the tortellini and drain excess water, which can be placed in cold water to stop cooking.
The asparagus was cut into small pieces and placed in salted water for a few minutes to give it more flavor and crispiness.
Now, chop the tomatoes and add them together with the tortellini, and add pistachios, almonds, and capers.
In another bowl for the pesto, olive oil was added and pour a little vinegar, salt, and pepper were added.
Mix the whole salad little by little and try not to use too much force so as not to break the tortellini.
Garnish with Parmesan and Basil and enjoys.
Summer salad with vegetables and chamoy
For this salad, we require
- ½ jicama
- ½ carrot
- ½ cucumber
- 5 tamarinds
- Worcestershire sauce
- Magui juice
- Lemon
- Chamoy
- 1 bag of Japanese peanuts
Start by shredding the vegetables and placing them in a bowl.
The tamarinds are cut into small pieces and mixed together with peanuts to give a crunchy and smooth consistency at the same time.
In another bowl, prepare the sauce mixture, although you can use the sauces that you like the most, whether you want the salad more or less spicy, add them at the end, and that’s it.
