How to prepare a moist vanilla cake

It is a simple sweet to prepare, it is also very delicious and perfect to accompany it with some type of drink to share in an afternoon of coffee with your friends.

Recipe ingredients:
- 120 grams of sugar
- 1/2 teaspoon chemical yeast
- 2 eggs
- 80 grams butter
- 300ml milk
- 250 grams of wheat flour
- 50 grams refined corn flour
- 1 vanilla pod
For the mold:
- Wheat flour
- Butter or lard
Recipe instructions:
- In a bowl, sift the two types of flour (wheat and corn), with the yeast and mix everything. We could also use self-rising flour to make the moist vanilla cake.
- Now, we put the milk in a saucepan and bring it to the fire. Add the vanilla pod cut in half to give off the aroma well and let it come to a boil. At that moment, we remove from the heat, cover the saucepan and let it infuse for at least 5 minutes. Strain and reserve.
- We put the oven to preheat to 170ºC with heat up and down and with a little butter (or shortening) we grease the mold in which we will make the moist vanilla cake (a plum cake type). Then sprinkle it with flour and reserve.
- Put the butter in a container, put it in the microwave for a few seconds so that it melts, and then add the sugar.
- Beat well until the sugar is almost dissolved and then add the eggs and integrate them.
- Add half of the flour and yeast mixture and beat well. We incorporate a glass of milk infused with vanilla (we reserve the rest to moisten the cake at the end), beat the dough, and finally, we just add the rest of the flour mixture.
- When we have a homogeneous mixture without lumps, we pour it into the mold and bake the vanilla cake for at least 25 minutes or until when we prick the cake with a toothpick, it comes out clean.
- Once outside, we wait two minutes, unmold and before it cools down, prick it with a fork and sprinkle it with the rest of the reserved milk; In this way, we will give our vanilla cake extra moisture, juiciness and aroma.
- Once cold, we serve the moist vanilla cake as is or sprinkled with a little icing sugar or accompanied by a scoop of your favorite ice cream.
Some additional tips
You can change the vanilla pod for a few drops of vanilla essence, as it flavors the same.
